how do you create 360 views like the one linked on here? do you have to have a compatible camera or can it be created from video footage?

just a normal digital stills camera and the relevant software from apple.

1. digital camera - wider the lens the better
2. Panoramic tripod head - this is to remove parallax error so that the images will line up better

Haven't done it in about 7 years but I seem to recall taking pictures every ten degrees and putting them all together in a super wide JPG.

How do you go about building 360 degree views of three dimensional objects - ie so you can spin them round etc? Is it just an output mode for a 3d render?

yup, you can render out panoramic images that include ceiling/floor and 360 degrees. They are all warped when you open the image in PS.
Import into a panoramic program and it'll export with a QTVR or some javascript based viewer.
Can be cool. We've done them for some renderings.
