I draw a square with the shape tool and grab the pen tool to add a point to the square. When I add the point, no matter how straight the lines are it adds a curve point when most times I want a corner point. Any idea how to change the default or why its adding curves by default? Thanks.

Hmm.. I've just had a go, but can't get a curved point without dragging slightly when i click to add - you sure you're not just being fat-fingered? :)
Unless I'm misunderstanding, have you tried just double clicking on your newly made point with the 'Convert Point Tool' to unset the curves?

Aside from being unusually fat fingered (size 13 ring finger) I'm just single clicking. Here's my usual process in this case:
draw rectangle with shape tool
select path with direct selection tool
switch to add anchor point tool, click on path, this creates an anchor with handles that appears straight on the line but is curved when I move it so I grab the convert anchor tool to convert it.It just defaults to curved all the time. annoying.
