I am a flash designer and I was hoping someone could tell me either links or a book that can give me information on hardware specifications for kiosk and interactive exhibits?

most kiosks are custom made and incorporate standard lcd/plasma displays, being driven by dvd's or some configuration of a computer.
mac minis/imacs are gettin very popular. As far as building interfaces in flash, think of them as full screen movies and your set. Alot of the times for advanced interactivity the flash movie is embedded in director projector files.

What he said. We are currently developing a installation for a trade show using an intel mac mini and an elo touch screen. Flash has advanced to the point where it's perfectly fine for kiosks and I find myself using director less and less with each release.

It's really not that complicated. You just need to make sure you know where the hardware is going to live, make sure you have enough cable length to reach the kiosk.
If the hardware and the kiosk are not close, then you might need power extenders, because it'll degrade if the cable runs are really long.
We used fiber in the last installation we installed.
Making sure the ID around the kiosk has enough fans/coolant is important too, so it doesn't over-heat.

unformatted, that is a *sweet* project. i would love to come there and experience this.
i had the opportunity to be the AD/lead designer on a very similar project that was to be built for WTC area (like 5 installs of it) as a neighborhood directory. it would use triagulation via cameras to allow for a sort of 'Minority Report' experience. users would point toward an item/section/navigation item on a monster flat panel w/o actually touching the screen face. it would then deduct where you were going (triangulation) and act as if you were selecting that item.
i got through design, and UI attributes and then the whole thing got shelved due to internal debates about which funder to go with. bullshit. :(
