Can any webbies enlighten me...
Say for example I search for "volvo cars" in Google - check out the first link it returns, and then underneath there is a handy wee collection of neat sub-categories... "XC90" etc...
How do they get that? Is it to do with how Volvo have built their site or what??

SEO is an industry unto itself. Compaines like Volvo pay a lot of money for an SEO company to optimize their site and use their leverage with search engines to get premium placement.
I worked at one briefly.

I like what google calls one-boxes, ie what comes out when you search for AAPL

when you get a hit from google you can find out what search the user did on google before they hit your site. it sounds like the site you visited has used the keywords and then delivered content relative to them
