ok this question goes out to all the scripters/coders/programmers out there: i know xhtml and css, but i would like to dive into databases, server side scripting, and such. what language should i start out with? php? javascript?

php, more bang for your buck

agree with php.
plus, if you've ever worked with ActionScript or JavaScript it seems to follow the same sort of logic.

If you wanted to get on a newer trend, you could learn Ruby and the Ruby on Rails framework. Lots of "2.0" projects/companies taking advantage of it.

a friend of mine that is very skilled with php told me that if he were to teach a class on php he'd use julie meloni's "php essentials" as a textbook.
the book is for php 3-4 and out of print, but i got one used from amazon for like $5.
it's very well written. one of the few 'computer' books that i could sit down with during the evening and not feel like i was working.
at the same guy's recommendation i grabbed "php and mysql for web development" and have been set up pretty well.

php.... but if you can try to play with coldfusion, its a little more forgiving and tag based like html.
sorry, but imo Ruby/Rails makes me gag

do most coders use windows/pc? i have a mac..

headaches caused by scripting are platform independent, so you'll be fine.
