when I publish my files as jpg or png and view them in a browser they look less saturated then when I am looking at them in photoshop. any ideas as to why this happens?

Save for web doesn't have fuck all to do with it, all that relates to is the compression of the image.
This will tell you all you need to know.

Oh, by the way... I heard about this thing. I think they call it Google... the rumor is that you can search for information with it... daft eh?

I think it might be cause you have a color profile set. i had that when doing graphics for the web.. but like said before, check your compression.

you need to.
for web you have to set your RGB workingspace to sRGB IEC profile.when you save your document for web and EMBED a color profile, your document appears with different colors in browsers that can't handle color profiles as IE and Firefox.
compare this image in Safari (color managed application) and Firefox (not)
