2.16 ghz with 2 gig ram or 2.33 ghz with 3 gig ram? both same sort of price. mainly going to be used for animation and motion graphics work. what do you reckon?

Dude, if they're both the same sort of price then go for the more powerful one. Especially if you're doing motion.

Are they both core 2 duo?I would go for the faster one, especially for animation. You can upgrade ram later, but processor you can't

ah, in that case, then yes. faster processor for sure.

..and take the 7200rpm hard drive if you can, a slow drive kills the performance anyway (but I guess it's only available on the 17")

yep sorry. i'm an idiot. that what i meant. ive done that on two boards now. what about buying cheaper non-apple ram and self installing- is that likely to bugger things up?

self-upgrade is how most ppl do it! check ram prices at http://crucial.co.uk
But for best results, take a weekend trip to Florida, buy the computer+ ram and come back with some change in your pocket, if US keyboard doesn't turn you off :)
