what kind of podcast?plain music/ voice / voice-music / w/chapters? / video podcast?
I just finished one for a client that is video podcast, you edit you file, then export to ipod video, that's it
then you need to create an rss feed (xml file) with proper tags for people to subscribe and to get displayed on the itunes store

we make our podcast in Logic Express and Pro, upload it through some esoteric PHP uploader and publish it in Wordpress after editing the file extensively in iTunes for a cover picture, and meta information.

just use any mic and get started. improve as you go along. We recorded many of the voiceovers with the Belkin mic for the latest generation iPods -- it's far from perfect, but it works...
