Draw a path that is the shape you want and give it a pretty thick stroke (try 5 to start).
Go to Object/Path/Outline Stroke and then switch the fill to stroke. Play around with different stroke weights to get the desired distance between the two lines.

Nice - thanks arthur, I appreciate it.

or... an easy way (that isn't set in stone like arthur's suggestion)
1. copy your original line (let's say it's 1 pt. thick).
2. paste the same line behind your original (cmd + b). Make it 2 pt. and stroke it white.
3. paste the original line again behind all the lines, and make it 3 pts. and the same colour as your original.
voila. you'll see it contours to your line perfectly.

The thing is, I'm trying to get several lines, 5+ if I can. Used to know how to do this stuff in PS a long time ago but still rather new to Illustrator.

I'd use brush, if there are no rough corners. It is the most flexible way i guess...

Use the offset path feature. From memory, its under object>path>offset path. Select your line, punch in the desired spacing, hit ok and repeat, increasing the offset by the desired amount each time. Many a way to skin a cat...

Never really tried the offset path feature. Nice, that may come in handy.

cratexl - offset path works the best of all of these, thianks!
Thanks to everyone for your help.
Just started using Illustrator in the past 6 months or so and have been kicking myself for never using it sooner.
