After years of building "normal" sites, I've been approached to build my first online shop.
Where should I start? What's the best eCommerce software to use? After all is said and done, I'd like to be able to build my own shop and not use CafePress or some other template thing.

For sometihng quite simple Agora Cart isn't too bad...
Though its not great either, especialy if your outside the US

yeah... currently living in Germany, possibly moving back to Toronto soon... so that's a no on the US.

Well, it can be done, its just tricky when it comes to the Payment Gateway side.
That said I've only really used that and zencart, http://www.zencart.com, so I'm no expert.

I was just looking at ZenCart, as it's a one-click install on my hosting service. I've been trying to sort out the differences between that and osCommerce and XT-Commerce, or just build my own shop but I've never done it and don't know how difficult it is or where to start.

I would build yr own cart, catalogue system and then build the payment gateway services seperately. This will help if different clients want to use different payment partners. you can keep the catalogue and cart and dev up the new payment solution

osCommerce is pretty comprehensive and customisable - however, it's very dense, so expect to spend a couple of weeks picking its section templates apart so you can work out how to render your own (for me anyway, not a php expert).
I've used it on two sites, both completely unalike, so can vouch for its 'editability' - after it all though, I kind of wished I'd chosen something sleeker and simpler..
That free Css Cart looks interesting, mind.
