What's the best way to preview a bunch of PDFs as thumbnails? Thanks

if you have them all in the same folder - you could run the Contact Sheet action in Photoshop

what's wrong with using the page tab in acrobat?

Unfortunately the PDFs are in several subfolders, and there's other file types that will corrupt the contact sheet process.
