Fontbook Help?

    I've never really managed my fonts very well, but thought I'd have a go. I've just created a new font set and moved some fonts across to it. When I disable this set, it says they are off but they all remain on in the All fonts list, and are still availble in my apps. Why? and how do I sort it out?
