Could anyone please tell me what this type of binding is called? Can you do it yourself cos it just looks like a kind of staple

Pretty sure it's loop stitching.
Done it before (here in UK) and the printer knew this term...

it wasn't much different to the cost of normal saddle stitch. But it was a few years back and via a print-buyer who had a number of print-finishers on his books.
Vague answer but it depends on your printer...

Yes, it's called saddle stitching (binding down the spine) and those particular staples (with the loop) are meant so that the booklet can be inserted into a ring-binder (folder).
