Jesse The Body Ventura in Predator. He didn't hit anything, but when he mowed down that 4 acres of rainforest with the gattling gun I was jumping up and down in my living room.
Matrix when Neo and that chick were taking chunks of concrete out of the pillars in that lobby.

Just watched it again Christmas Eve, a total classic:
Raiders of the Lost Ark (barfight scene)
Honorable mention:
The Replacement Killers (When Chow Yun-Fat and Mira Sorvino meet)
Aliens (first encounter with the Aliens. Not exactly a gunfight considering the aliens are unarmed, but still good stuff)
Grosse Point Blank (John Cusack and Dan Aykroyd fighting while discussing forming a union for hitmen)
Commando (Pretty much every scene, but especially the final island assualt)
and I know no one wants to say it, but...
