I am looking to get started... I want to do some basic mixing and create some instrumental beats. Looking for something to do the job that has a rather easy interface and structure.

If you have money to spend, then pro tools, I use Logic and Reason along with A.Pack for 5.1 surround sound.

I've heard a lot about fruity loops is that something simple and basic to start with?

it's simple, I think it's really limited from what I've heard. Reason is made for Windows as well as Mac, it's got built in loops and allows for midi hook up so you can create your own. Check it out.

Use hardware and records and sample those with software.
ReSequence.
There's a major difference between sequencers and beat and groovemaking machines/software. Although, most beat makers have their own sequencers, but their not that good.
