How can I find out what resolution the majority of my client's audience is using?

Use javascript , php, or flash with a database to capture the user info.

Awstats can, but you have to stick some code in the xhtml for it to work

you can't. just impose your will. but your will should be around 1024 px wide (less 18px for ie or ff scrollbars)
