I've done a small booklet in indesign before (20pages).. and it came out fine.
I'm about to attempt a 100-ish page A5 Booklet. I'm looking for a smart way to do it so that when the enevitable changes come from people, I can adapt it quite easily.
I've been reading the help on Indesign Books, which let you create a book out of multiple indesign documents. So I'm thinking an Indesign Document for each chapter and then compile them into a "book".
I assume the book file will respect auto page number fields. Is this correct? Am I going about this the right way?

you should be able to do it the way you've described-- I've done smaller publications compiled from seperate indd files, and I've had no problems.
