this is probably really really dumb, but....
.....how would i go about separating something like a watercolor image for silkscreen?

depends how your document is setup but you just go colour by colour / layer by layer. various ways.

what like color selection?
basically it's a drawing by a tatto artist, black outlines, with red and blue coloring

you can flatten the image select all the blacks, that's one layer, do the same for red and blue and optionally add an extra layer which contains all for a solid / double colour if needed.
the only thing you have to watch out for is gaps between the colours. one of the colours has to overlap the other to be safe.

oh and you can pixel halftone the edges if you want a softer overlap between colours.

why not just select the color separation in the print options and print to file?
- anon0
ah yes that's an option too as long as you don't work in rgb or cmyk (unless you already seperate already per channel, e.g. red = magenta), you should work with spot colours and you should keep track of the overprints and knockouts as well as the overlaps / gaps again.
