My G5 has a Maxtor as standard.. Apple must think they are OK?
Prefer Seagate myself, but reviews on 'best boot drive for G5' have said Maxtor Diamond Max is better.

I have 4 Maxtors in my house, they all run great. Once i got one that gave me a problem right out of the box. They had a new one out to me in a day and it that worked without a problem. So I have nothing but good things to say.
If you avoid any HD manufacturer it should be IBM.

I had an IBM Desktar (Apple OEM) die on me... luckily it made clicking noises for weeks so I backed up...
