Illustrator Question

So I do a lot of sign work at my job and need to adhere to certain standards concerning Letter height.
When I change my text preferences over in Illustrator to inches from points and I plug in a number it is always smaller. (ie... 11" caps height is only 8 inches)
Anyone know why and if there is a way around this?

i don't know what caps height is, but the 3 missing inches accounts for leading and any descenders. why not just keep using points for type and size it to fit using the ruler and guides?

You know that's what I thought.. It still doesnt make much sense.. if you need an 11 inch letter you should be able to type in 11 and get that.
I end up just using the ruler and guides.. but it would just be easier to be able to type in 11 and go!

Oh and Cap height is a word she uses... inaccurate vernacular can be addictive!
