Font embedding problems

I'm having real problems amending a pdf file in Acrobat 7 Professional. I keep getting a message saying that the font stored on the page and the system font are encoded differently...the encoding could not be resolved.
How can I resolve this? I'm running Panther 10.3.8 and creating the pdf from Quark 6.5 and running it through Distiller.
I'd appreciate your help before this drives me insane.

What fonts are used in the PDF?

PDFs are not really meant to be edited like that. All sorts of font issues can occur if your trying to hack it apart without the fonts it was made with. More details about the fonts and the system the pdf was made on and i might be able to help.

I am creating a post script file through Quark 6.5. Running it through Distiller with all fonts embedded. Basically all I need doing is to change a date to a proof cover sheet. Acrobat 6 let's me do this simply with the touch-up tool. However with Acrobat 7 it won't allow this.
The font I need changing is Meta. System is Mac OS X 10.3.8.
