depends upon the "education" we're talking about. grade school? high school? college?
for the younger crowd, a spring color pallette popped into my head. blues, greens, a little yellow...

It's more than just colors, it's color combinations. I think for colleges, they often choose bright, but darker colors. Dark reds, blues, golds, dark greensm etc. It's all about how you put them together. Typography will also help alot. Big thick heavy traditional fonts, maybe. For younger audience, you might think about primary colors, simple shapes, thin san serif fonts.
