drawn a "U" with a broad pen stroke, outlined stroke, tried to add a gradient mesh, but it looks like shit.

Gradient meshes make me want to cry.

Divide the U into two or three shapes. Use the mesh in each shape. It's tricky to get it all blended together, but possible.
