Anyone know of what I need ot do to get Apache to work on an external drive so I can run PHP stuff independently from the web when going to meetings etc?

wait a minute. where do you want to hook that external drive up to when you're in a meeting? your own laptop?

plus home pc as well as works PC... I'd like to just have everything in one place

oh ok. thing is all those laptops need to be configured that apache is running on an external drive. which doesn't make sense. proned to run into problems. or you install an os + everything you need on that external drive and make it bootable so you boot from the external drive and not from the laptop's own drive. basically what you want is a server.

well.. you could setup your lappie with a local server and let the other users access your root folder over a small network or so..?
hmmm

Or you could use LAMPPIX.

You could also trying using a USB-Bootable Linux distro on the External Drive...but that requires a new enough BIOS that allows USB booting.
Damn Small Linux is an Embedded Linux version that could work for you...
but, i've never tried this, so i don't know how it will work out for sure.

rabbatski is right.
you'll have to install a complete OS on that external drive, install the Apache server and boot from that same hardrive.
