can anyone tell me why the printouts in indesign come out totally different (darker) than on screen and compared to printing from photoshop?

Have you set up your color profiles in Photoshop correctly?

Yeah, i find indesign is one of the most unreliable programs for colour accuracy.
But, i have kinda got used to it. Its reliably unreliable ... if you know what i mean

Check your printer (I guess the beef one you're refering to).
Can it print from CMYK? Some ink jets do their own conversion from RGB -> CMYK for the consumer morons. If you hit it with CMYK and it can't deal with it directly, you're going CMYK->RGB->CMYK.
No telling what you'll get.
Also - check your inDesign settings.
