I am working with some graphics that are essentially outlined in photoshop in black, and are primarily white.
Then there is a smidgen of red.
I am attempting to do color seperations of these images but I cannot figure out how to get a layer of white...
Anyone have any tips?

unless white is a specific PMS (if you're printing on colored stock, for example) then you won't have a separation. White, in ink terms, is the absence of color. So just make sure none of your other seps have in where white should be.
