I claim this thread to answer all printing questions!
Starting with this...
If printing white on white how would one go about showing this in Illustrator for instance? The printer would not see the type when they opened the file. How do people do this?

just make the white, say c=100% and tell the printer that everything that's C100 print in white/glossy vanish.
It doesn't matter for the printer what colour it is in the file when he makes the film/separation

Here is another question,
I would like to see the Marks & Bleed on my canvas in illustrator (Trim marks, Register marks, color bars and page information) but I am only able to view this when I print. Is there anyway to pull these marks up for viewing while working on the file itself?

jsut select any CMY colour - i usually use magenta - then in BIG TYPE off the actual printing page type - PRINT MAGENTA AS PANTONE WHITE - they'll just make films and plates for it like any other colour but just print it with the correct ink.
But ALWAYS call the printers and make sure they totally understand what you mean.

No.. You can make trim marks though. select a box and then:
Menu > filter > create trim marks
build the other crap manually and copy paste to all files from then on.

get used to deliver files from InDesign or Quark either in original or pdf instead of illustrator, will save both you and the printer much time. If you wanna use cropmarks in illustrator use filter>create crop mark and not object>crop area because in the first alternative you can expand it and change stroke thickness etc...

ok. I have some very basic questions about inDesign. I have been reluctant to learn because I am so good at Ill but it is time I face my fears.
Do you all import your work from Illustrator into Indesign, or do you do all your text layout in Indesign and only import graphics?

import artwork only
I do import some typography aswell like ornaments etc...
