  I'm submitting a logo propsal by email, what sort of disclaimer/copyright info should I include to safeguard myself from them ripping it off?

  you should upload the art to a server and password protect the folder. give the client the password and put the disclaimer in the email saying something like:
  by viewing this you agree to xyz.
  and mail yourself the art poorman's copyright style.
