Avoid spring break. Xcaret is nice.

on that note, why not just avoid Cancun in the first place. There are literally like 3,000 other places you can go to, including stateside Virgin Islands. No Passport necessary.

merida is a great town...close to uxmal and chichen itza, which are spectacular.
then you have huatulco, ixtapa and zihuatanejo, all of which i highly recommend.
