does anyone know if you can convert CAD files (outside of CAD) into a more compatible and generic format (jpg, pdf) for printing?

One way, is to use the printToJpeg driver that comes with AutoCAD.
another is opening the file with CorelDraw [wich has very good compatibility with DXF & DWG files] and export to a raster file of your choice.

From CAD, you can export as an EPS, which works well sometimes. You can open that in illustrator and modify it aswell.
Another way is to export a DXF from CAD. This can also be opened and modified in illustrator, in order to clean up the file and delete stuff that makes the file bloated.

Adobe Illustrator and i think freehand can open .DWG files. which i believe is what AutoCad saves.
