can you convert an illustrator to greyscale, but instead of using black, use another color to scale? say a blue?

select>same>fill color (or stroke, whatever) and then replace it with whatever you had in mind.

Do what GreedoLives is saying.
But try to replace the fill with a Pantone color from your pallets, not just from the eye dropper tool because that way it will keep the screens you already have in place with the black.

if i understand correctlt what you are trying to acieve, i think you can do it by drawing a white rectangle behind your artwork, and a rectangle in the color you want as your scale on top of your artwork with its transparacy mode set to 'color'

i brought it into photoshop, trew a color layer ontop and a color transfer mode. works I guess, will see when it comes to ripping the file for print.
