How do ya'll deal gracefully with clients who start their dialog with "I have a little project that shouldn't take more than X hours to do."
This drives me nuts and I have a client who always starts a dialog this way. Aside from punching him in the nose (my plan b) how do I handle it gracefully?

what you say is this, "Well, "I have a little bill that shouldn't take more than 2K to pay." Thanks for playing the fucking game come again dickheadz. ;)

Just say, Ill get back to you with roughs for approval in x hours.
Go to pub for x hours-20 mins and use the 20 mins to scribble something.

good idea, J! That will be my new plan b. Plan C will be the punch in the nose.
Seriously though, it really gets to me. It's so passive aggressive and controlling.
