AIFF vs. Mp3

what is the difference? i am attempting to grab some of my CD's and drag them to the desktop but they are showing as aiff's and they dont list the titles? wtf? Am I supposed to title these myself?

Aiff is what Mp3s become if you convert them to burn them to a music cd. Aiff is the standard format for cd recordings, and has a much higher capacity for quality than its emaciated cousin the Mp3.

Bigger file size too though right? How can I convert them into MP3's?

Most players have a converter.

How? Thats what Im using but cannot seem to locate anything that gives the option. OSX.

have you tried adding the file to the library or simply dragging the file to the itunes area

Just dragging them.

in iTunes:
in preferences menu, set "import" setting to MP3. then, select the file from your library (to get it there, you'll have to drag the file onto iTunes) and then choose "import / convert file" from one of the top menus.
