Number one has the right idea (in terms of trying to describe the company and practice) but looks like it could be fine tuned. It looks a little too heavy handed.
The first 'e' with the shape around it (speech bubble?) needs work but could develop into something...
...keep on truckin'.

#2 by far looks the most refined in my opinion. although, i don't care for the e tilted like that. just be straight-forward and create a beautiful type mark if there isn't a clear conceptual solution.

There are already a shitload of logoes set in Avantgarde - its the tilted in #2 that makes it stand out a bit from the rest

If you go for number two i'd do something about that 's'...it looks too squashed.
Make it rounder...?

3 is working the best. While the forms in the graphic imitate those in the lowercase e, i think the graphic could be more incorporated in the word and lettering

shoulda listened to me and maddy and used that previous one with just some tweaking of the type like raising the ascenders of the L's and working slightly and I mean slightly on the legibility.. gotta be brave y'know.

Is there a meaning behind all these forms? What are they suppose to represent?

actually yes:
as in 5 and 6 they represent the letter 's'.
in 3 there's half a star cause 'estelle' is spanish for 'star'.
