Site Maps. How do you do it?

Question for people who deal with client services/project development. Preferably people with several years of serious work in this area.
What do you typically use to layout the map. We use several different processes, including creating a PDF from Illustrator, using Excel or Word, etc.
Someone mentioned Visio, but he was so adamant that using other things like Word was backwards and not very professional. I disagreed completely and thought he was being a consultant type ass.
What do you think about that and site map development in general?

Well personally I use AI or Corel Draw (preffered) and build the whole structure with brief explanations of every section and content that goes in it. Then I publish PDF and consult with the client to sign off on it. I receive the confirmation and after that start developing UI to navigate through the map. I personally used Visio 2002 and found it very usefull but very limited as far as final appearance, so I kept working in Corel or Illy.

I go with Visio to draw the structure of the site map and usually follow up with written descriptions of each area or page. I don't know why a designer would even have Word installed on his computer. ;)
