Anyone know any issues about displaying your work online when, technically, you don't have rights over the projects?
I'm just wondering whether my employers will get pissed if they find out I'm showcasing half of their prized jobs on my personal site, although I created them all.
I would ask them, but it's a bit of a blatant "I'm leaving" giveaway.

As long as you make it clear what company you were working for when you completed the project and also give credit to any collaborators then I see no harm in it.
Its free publicity for them anyway.

if you give the credits to 'everybody' is not a problem, i think.

Usualy contracts have to allow you to display some of it in your portfolio once it's released publicly.

Just take a look to the contract you signed. In my case, I cant display the work I've done with them for a period of one year after it was made.
