I'm working on a site at the moment and I have one main BG pic, and the menu images are located on that same pic( the whole image made in PS). Now I cut those words out that have to form the menu, and make .gif from them and than import them in dreamweaver yo lay them over the main BG, so only the letters will lay over the BG. I choose gif because it can be transparant. But when I import the .gif files and lay them over the main BG in dreamweaver, it looks fucked. the .gif files lost all the quality. How do I solve this smart? ... jpg can;t be transparent... can it?

pick a matte color that fits the colour of the bg.
(matte colour = colour on edges of gif)

yeah I tried that, it was helping. but not enough. I'm cutting jpg's now inculding parts from the main bg. that sure works :)

To me it sounds like your taking the wrong route in doing this, but maybe thats just me. Either way, in PS when you do a save for web, simply check out the optimized preview, what you see is what you'll get, remember the matte and make sure you choose the right swatch for your transparency.... goodluck.
