there are many ways, the best solution (superior in quality as far as i know) is: http://www.apple.com/quicktime/q…
there are many more (commercial/shareware/freeware) applications who can 'stitch' together your pictures.
You can basically use any camera mounted on a solid tripod (not in NYC, mind you...lol), and just shoot in steps of say 10-20 degrees depending on how wide the angle is of the lens you are using.
I have done it a couple of times, but to get full 360 (in all directions) effect you might need some serious experience and equipment to reach perfect results ( to overcome such trouble with aperture/shutterspeed differences etc.)
there are also many tutorials out there.

not quite as good as the last...
The last looks more like an IPIX camera. I've only seen QTVR that moved side to side -- like my crappy version -- not up and down.

you can also easily export Quicktime VR's from most well-known 3d applications such as Cinema 4d and Bryce and prolly also the others, but I have never worked with them.

i once made a few cheap ones for a client:

its actually very easy to do in quicktime, but the program is pretty expensive. (and i dont think it can be found for free.) we played around in quicktimeVR in school. i think i will put together some cool panaramas for my site soon. like of places i like and shit.

there are cheaper alternatives such as PhotoVista and some other small apps for pc..
i have seen them, not sure where tho.
