Lychee, converting your fonts in Illustrator= convert to paths or outlines... turning the letterforms into shapes.
In a raster program like photoshop, converting your fonts will rasterize them into pixel based images.
In photoshop, you 'render the layer'... in Illustrator, you 'create outlines'.
Never rasterize anything in Illustrator— messy

Always get the proofs sent to you, not the client. That way, if there's a balls up the client need not know.
