Illustrator help

I found a lot online about this but I am looking for a short answer from experienced users.
1. What flatness level or output should I set Illustrator to when sending files to print.?
2. Will setting the output once change it in the whole document?
My dylux proof that came backtoday looked like crap. Circles looked like stop signs. I am currently set at 300.

I am currently working in the design studio at a big printing firm, and we never accept anything in Illustrator set below 800 - and we go up to as much as 2400 for certain images if they are really small and delicate lines.

default setting is 800 and that is the lowest you should work at

What would happen if I set my default to something like... 1800?

I was taught to use 2450. 800 is fine for work with very little detail, but if you're doing fine type, it has to be much higher.
