Any one know of a good, simple software to edit music on a Mac in OS X?

Sure: Wavelab, Logic etc.

so you were asking about editing not producing right? you can do production with many tools such as Propellerheads' Reason and ReBirth and there are many others.

what are you looking to do? make music or edit it? those are two different issues.

I'm looking to edit my dj mixes that I've recorded to my hardrive. Maybe add some effects, but Im trying to keep the sound quality as high as possible.

editing is one thing, effects is another.
try protools for some industry standard experience.

pro tools is ok, not that easy for you to learn, LOGIC is switching to MAC and is much better and easier to use. If you are just importing mixes that have been prerecorded or are .wav files then you are going to want to use either WAVELAB or SOUND FORGE. Two of the best. I would actually use SF as it is hands down THE best editor for Home PC usage.
