A trick I used to use for duotones in photoshop: Work in a CMYK file but only use 2 channels. Black and yellow for this example. Make sure the remaining 2 channels (magenta and cyan are empty) Then when you're ready to print, tell the printer to replace the yellow plate with gold and and black plate with black ink and to forget about running the other 2. This is easier to show visually than it is to explain, so I'm kinda hoping this made sense.
