Here's what I usually say to the client who wants me to create his content:
"My field of expertise is design and the technical part, but if you need help with your content, I cooperate with a very good copywriter and a photographer. I can subcontract them for this website if you want me too. They are not very expensive (here I put huge figures they charge) but I can assure you they are top professionals. Just let me know and I'll check their availability."
This usually helps, but not always. I'm stuck with an 'italian' shoes company who gave me zero usable pictures. Morons.
Oh, actually it was my mistake, I broke my rule: "do not start working before full content and 40% in advance is received"
