ok, i really dont understand
were your eps files created in photoshop or illy? and how do you change a illy file to grayscale?
or was it a placed eps in a illy file?please advise per general curiousity

photos converted to monotones in PS, saved as .eps then placed in illy. All objects and text in the illy are now pantone 369u. I get a call that all my images are CMYK. I open in PS and all are monotones. The illy files are saved as .eps as are all the PSDs.
Printer says there a bug in PS that won't allow PSDs to be saved as monotones(?) only CMYK(not monotones). He says this will be fixed in the next version of PS.
Sounds fishy, I'm not buying it. His son is the pre-press guy so I'm thinking he's just young and confused.
