Do iBooks have an s-video out? I know the Powerbooks do, which would be your ideal solution. If there's an input to hook up a second monitor (DVI?) then there's probably a dongle or cable that converts to s-video or RCA.
I have a really old TV that only has a composite input and to hook up my Powerbook I used an s-video to RCA cable to my VCR, then the composite from it to the TV. Pain in the ass, I hope it's easier for you.
