    ever heard of osmosis? it basically unbalances the water concentration in the cells. if your cells are floating around in a concentrated stream with elevated levels of sodium chloride, then by difusion, water will be pulled from the cells. that's why even when you're well hydrated, you feel thirsty.

    ps. sodium on it's own is not salt.
