Honestly I think just a microphone will do it..
First thought might be to like chuck the output into Native Instruments Reaktor, then you can do some preprocessing, like reading the level, frequencies, etc, by knocking together some bespoke 'instruments' and output the results to midi channels and then out onto the lighting desk..
There might even be some little app at download.com or something.
