your 300 dpi images should be cmyk TIFF's. if you save them as EPS files, some programs wont be able to parse the EPS data properly and you could get some shifty results when they output the photos.
and ribit, 72 dpi is far from a myth, dude. monitors display images at 72dpi. when its says 320 - it doesnt mean DPI - it means PPI.
