ive worked on vehicles for several big feature films. you can do a few things, like path-based animation (draw splines and cars follow) or rig the car like a character with bones and keyframe animate everything.
ive never heard of a show attempting to matchmove the street geometry from the plate and have a cg car react to it, tho.
usually you rig the wheels with expressions to turn at the correct speed, and right+left. also body roll, etc, and have the car follow your curves.
also, make sure to have the mm camera actually moving in 3d space, as opposed to rotating nodally about the origin.
