Just be honest with your old boss. It's respect. Now since you did leave and started your own business, and the client came to you, it's up to you to take the job.
If you're that concerned that your old boss/friend will be that steamed over it, maybe try to work something out with him. Dog eat dog world, but friends are worth keeping too.
